Amarone is one of the best-known and nicest wines of Italy. This delicious example comes from the Cavedini family who own a small winery in Veneto near Verona in North Eastern Italy. Made from a trio of red grapes of Corvina, Rondinella, and Merlot, it has warm aromas of soft all-spice, dark red fruits and hints of liquorice. The flavours are powerful, elegant and concentrated with plenty of rich dark cherries, dried fruit, dates and plums. Beautifully balanced and smooth with subtle notes of dark chocolate and vanilla to finish. 2016 was another exceptional vintage. This Amarone is definitely worth trying. Amarone is extremely versatile when it comes to food and pairs brilliantly with grilled and braised meats, game, roasts and ripe cheeses. Sip and enjoy with a wonderful winter venison stew, a grilled sirloin or Confit Duck Leg with Red Cherry Jus.
About the Producer
Corte Cavedini is a small 7 hectare winery run by Umberto Cavedini with his wife Paola and their children Marco and Elena. Their vines are between 25-30 years old and are grown on calcareous soils in the Valpolicella hills just outside of Verona. The family follow sustainable vineyard practices and work in the traditional way as passed down from previous generations producing characterful wines with a great purity and depth of fruit flavours .
Directly after harvest in October, the grapes are air dried for several months through a process called ‘appassimento’, which allows them to shrivel into raisins. This concentrates the sugar and flavours in the grapes before fermentation. When pressed, they deliver a sweet concentrated must that can be fully fermented to dryness, producing a distinctive and full-bodied wine that is aged initially for 28 months in large French barrels and then for an additional 12 months in bottle. This allows the Amarone to develop wonderful concentrated date and prune-like aromas with mocha and raison-like flavours.
Serving Guide: Serve slightly cooler than room temperature at 18-20C. Decant for 45 minutes prior to serving or pour small quantities into larger glasses then swirl and sniff for 15 minutes to bring out all the rich nuances of this wonderful wine. Drinking beautifully now with further ageing potential until 2027+

- Lupin which includes lupin seeds and flour and can be found in types of bread, pastries and pasta
- Molluscs like clams, mussels, whelks, oysters, snails and squid
