Duck Breasts or Magret de Canard are a real treat. Fed on a diet rich in grain, this duck meat is incredibly juicy, tender and packed full of lovely gamey flavour.
Carefully selected for their quality and size, these Magrets are simple to cook, delicious to eat and extremely versatile.
Simply score the skin of each Duck Breast with a criss-cross pattern using a sharp knife. This allows the fat to be released during the cooking process and helps crisp up the skin nicely. Season generously with salt and pepper and place the duck skin side down in a hot pan. No fat or oil is needed.
Cook for about 8-10 minutes and then lower the heat to medium. Flip the duck over and cook for a further 5 minutes. Once cooked to perfection, leave to rest for 5 minutes. And slice and serve.
Duck works beautifully with many kinds of sauces and chutneys such as cherry, plum, and orange. Using these traditional flavour combinations why not make a classic French Duck A L’Orange or even a simple but utterly delicious Warm Pan-Seared Duck, Apricot And Rocket Salad.
