Pasticceria Vergani have been baking traditional panettone for over 75 years. They only use the finest quality natural ingredients. And believe the secret to a great panettone lies with the sourdough. They still use the same sourdough starter that Angelo Vergani created many years ago which is wrapped in a cloth and refreshed three times a day. As a result, their panettone is deliciously light with an exquisite texture and packed full of flavour.
Our Prosecco comes from Valdobbiadene in the heart of Italy’s prestigious Prosecco region. This premium sparkling wine is made by the Toffoli family on their 12-acre estate. Each year Vincenzo Toffoli and his sons harvest their Glera grapes picking each bunch by hand to ensure the highest level of quality Prosecco is produced with minimal impact on the environment.
Although nearly any food is capable of causing an allergic reaction, only the bellow listed foods account for 90 percent of all food-allergic reactions. These foods are:
- Cereals containing gluten, namely: wheat (such as spelt and Khorasan wheat), rye, barley, oats
- Crustaceans for example prawns, crabs, lobster, crayfish
- Nuts; namely almonds, hazelnuts, walnuts, cashews, pecan nuts, Brazil nuts, pistachio nuts, macadamia (or Queensland) nuts
- Celery (including celeriac)
- Sulphur dioxide/sulphites, where added and at a level above 10mg/kg in the finished product. This can be used as a preservative in dried fruit
- Lupin which includes lupin seeds and flour and can be found in types of bread, pastries and pasta
- Molluscs like clams, mussels, whelks, oysters, snails and squid
