One of the jewels of Segovia gastronomy is the the Judión Granja bean, named after the town of La Granja in San Ildefonso. Here it is grown exclusively and is known by the name “white of Spain”. Called Judión for its large size, this bean is surprisingly very tender and tasty, something that perhaps is not expected due to its large size. It is a typical winter food in La Granja.
It is already cooked, so there's no need for the 24 hour soaking, just open, rinse and add to your authentic Spanish dishes.
