Hams of 4 to 5 kilos. Intensely flavoured & from the iberian black footed pig, fed entirely in the wild on acorns & grass. This ham has no rind at all. Cured 22 months min. The Iberian pig, also known as “pata negra” is a race bred in Spain since time immemorial. The hams are cured very slowly in fresh mountain air until each ham reaches the ideal moment of maturity, almost always more than 22 months.
