Description
Mangalica are a type of sausage made from Mangalica pork, a unique and rare breed of pig native to Hungary. One of the most striking features of these pigs are their thick, curly, woolly coats, which gives them the appearance of sheep.
Slowly fattened over a period of 18 months, these fleecy pigs are allowed to forage in the wild and roam freely. Thanks to their natural diet of grass, roots and nuts, their meat has incredibly depth of flavour and a nutty, slightly sweet taste. It has an exceptional level of marbling and a higher fat content compared to most other breeds. Resulting in a meat that is rich, tender and juicy making it the perfect choice for sausage-making.
These Hungarian sausages are crafted using only the finest pork cuts. The meat is ground up and seasoned with Hungarian Paprika, along with other aromatic spices. The sausages are then slowly smoked over Beachwood fires for two to three days. After smoking, the sausages are left to air-dry for several weeks. Allowing their smoky and spicy notes to intensify and mature. As a result, every bite of these delicious sausages delivers an intense punch of flavour.
Slice thinly and serve as part of a charcuterie board with other cured meats and cheeses. Or add to an omelette for a lovely savour twist. These sausages also make an excellent pizza topping – you won’t regret it!
So, if you enjoy smoked sausages, Mangalica are definitely worth trying to experience the wonderful flavours of Hungarian food and traditional cuisine.
