Our Mortadella Slices are super tasty and super convenient. Mortadella is a large Italian pork sausage that originates from Bologna in Northern Italy. Instantly recognisable with its bright pink interior dotted with white fat spots, it is made from a mixture of the best pork, finely ground pork rind and pork lardens.
It is unique as it is cooked and not cured like many other cold Italian meats. The raw pork is first ground into a smooth paste to which the fat cubes are added along with carefully selected blend of spices. This mixture is then fed into a sausage casing and cooked very slowly at a low temperature. So that the fat cubes remain tender without melting during the baking process. It is this that gives Mortadella its delicate sweet pork flavour.
Many Italians serve this delicious pork sausage, either cubed or sliced, as part of a charcuterie board appetizer. It is also makes the best sandwiches. Layer Mortadella Slices on some fresh Italian bread along with Mozzarella drizzled with Basil Pesto. Could a sandwich get any better!
Mortadella can also be used as a filling for ravioli or thinly sliced and scattered over a tasty pasta salad.

- Lupin which includes lupin seeds and flour and can be found in types of bread, pastries and pasta
- Molluscs like clams, mussels, whelks, oysters, snails and squid
