Noirmoutier Sea Salt Butter is made from sea salt crystals that come from the beautiful small island of Noirmoutier just of the Bay of Biscay in France.
The sea marshes that cover the middle of the island known as salterns form a maze of salt canals and clay pools where the islanders each year harvest the salt with the help of the sun and wind. They still use the same ancient farming techniques that have been passed down from generation to generation since the 5th century when a group of Benedictine monks transformed the island’s wetlands into salterns.
It is these small grains of salt which give this butter its delicious crunch and provide it with its unique lightly iodised taste.
