Description

Poussin is simply a butchers term for a young chicken. Breeds used tend to be naturally slow growing resulting in meat that is very tender, juicy and yet packed full of flavour. The all white meat has a delicate sweetness to it. Not dissimilar to chicken, but just a little bit leaner. So if you love chicken but want to try something different, then poussin is a great choice. The meat is always super tasty and moist because these birds are cooked on the bone.

Each poussin is the perfect portion for one so why not wow your guests at your next dinner party by serving each of them this much underrated bird. There are loads of fantastic recipes out there but to get your creative juices flowing how about Roast Poussin with Preserved Lemon Stuffing or Garlic And Herb Roasted Poussin with Duck Fat Crispy Potatoes.

If it looks like barbecue weather, why not pop a few of these birds over the flames having marinaded them in orange and honey overnight. Sweet, sticky and delicious. Serve with a simple tomato and cucumber salad and some homemade coleslaw on the side.

Whatever your favourite recipe is, poussin is endlessly versatile and will without a doubt become a firm family favourite.
