Our Prosciutto Crudo Stagionato is a boneless salt-cured, dry-aged ham from Italy. Salt-curing dates back to pre-Roman times. Pork legs were dry-aged as a means of extending meat supply during the long winter months. So the art of creating this delicious Prosciutto has been perfected over the centuries.
The meat is first covered in salt and left to rest for a few weeks concentrating the flavour of the pork. After the salting process is complete, the pork legs are washed and left to dry-age and mature for months. It is this combination of salt, air and time that gives this Italian Prosciutto its distinctive dark red colour, creamy texture and delicate sweet taste.
Slice paper thin. And savour how it literally melts in your mouth. Giving a wonderful array of complex sweet and salty flavours. Delicious on its own, this prosciutto also makes an excellent addition to a cheese and charcuterie board. The subtly sweet but intense flavour of the ham works brilliantly with creamy cheeses and fresh fruits. So why not try wrapping it around slices of juicy cantaloupe melon, fresh figs or pear for a classic Italian treat. It also pairs well with cooked asparagus and peas. Or if you love pizza, drape some slices of this Prosciutto Crudo Stagionato over your base for the perfect topping. Bon Appétit!
This Boneless Leg of Italian Ham weighs approximately 6kg
Although nearly any food is capable of causing an allergic reaction, only the bellow listed foods account for 90 percent of all food-allergic reactions. These foods are:
- Cereals containing gluten, namely: wheat (such as spelt and Khorasan wheat), rye, barley, oats
- Crustaceans for example prawns, crabs, lobster, crayfish
- Eggs
- Fish
- Peanuts
- Soybeans
- Milk
- Nuts; namely almonds, hazelnuts, walnuts, cashews, pecan nuts, Brazil nuts, pistachio nuts, macadamia (or Queensland) nuts
- Celery (including celeriac)
- Mustard
- Sesame
- Sulphur dioxide/sulphites, where added and at a level above 10mg/kg in the finished product. This can be used as a preservative in dried fruit
- Lupin which includes lupin seeds and flour and can be found in types of bread, pastries and pasta
- Molluscs like clams, mussels, whelks, oysters, snails and squid
