Richard Cook of Severn & Wye Smokery in Westbury-on-Severn has spent over 27 years developing and honing the company’s range of smoky delicacies including their amazing Smoked Salmon.
As a company, they have strong green credentials with a zero-carbon footprint and a tree re-planting scheme to replace the oaks felled for wood smoking. They also work closely with local colleges to train students in fishmongery, curing and smoking to help ensure this traditional craft does not die out.
