Made from freshly caught anchovies, these tender fillets have a delicate texture. They provide a clean, refreshing taste that is perfect for tapas, appetisers, and Mediterranean dishes.
Yurrita selects its anchovies directly from fishing boats, choosing only the freshest, highest-quality fish. The team carefully inspects each catch for freshness and size, ensuring consistent quality and exceptional flavour in every pack.
Once selected, the anchovies are cleaned entirely by hand using traditional artisan techniques. Skilled craftsmen carefully remove the heads, bones, and innards, leaving perfectly prepared fillets that are tender, smooth, and ready for marinating. This meticulous process helps preserve the natural quality of the fish while ensuring an outstanding eating experience.
The fillets are then marinated using Yurrita’s carefully guarded blend of vinegars. This special recipe gently transforms the fresh anchovies into authentic Spanish boquerones, giving them their characteristic white appearance, delicate acidity, and wonderfully fresh taste. Finally, Yurrita packs the boquerones generously in premium extra virgin olive oil, enhancing their flavour and preserving their soft, succulent texture.

Storage: Must be kept refrigerated between 5°C and 12°C. Once opened, keep refrigerated below 8°C in a non-metallic container, covered in its oil, and consume within 3 days
