Introducing our Veal Osso Bucco or Veal Shanks. Veal comes from the meat of young calves and is much more tender and leaner than Beef. And has a delicate milky taste and flavour.

Osso Bucco is not only a specific cut of meat, it is also the name of a much loved Italian dish from the Lombardy region in Northern Italy. It literally means ‘bone with a hole’ referring to the marrow-filled bone at the centre of each Veal Shank. A key component of this classic dish.

To make this dish, these thick, round slices of Veal are first browned with a medley of sautéed vegetables. Typically onion, carrot, and celery along with garlic, tomatoes, and a selection of aromatic herbs. White wine and veal broth is then added and the meat is left to slow cook for several hours. During this braising process, the bone marrow dissolves and melts into the sauce. Adding a rich velvety creaminess and distinctive flavour to this dish.

Just before serving, Gremolata – a traditional garnish made from lemon zest, garlic and parsley – is sprinkled on top of the veal shanks for a burst of freshness.

This amazing dish is usually served with a side of risotto or creamy polenta to help soak up its wonderful flavours. A delicious and hearty dish that combines tender, fall-off-the-bone Veal with a delicious sauce that’s both satisfying and indulgent. It’s certainly a dish that demands time and attention, but in return offers a depth of flavour that is truly remarkable.

  • Lupin which includes lupin seeds and flour and can be found in types of bread, pastries and pasta
  • Molluscs like clams, mussels, whelks, oysters, snails and squid
