The White Truffles, (Tuber Magnatum), also called “Piedmont Truffle” or the “White Truffle from Alba”. Growing symbiotically with oak, hazel, poplar or beech and fruiting in autumn, they can reach 12 cm diameter and around 500 g weight, though usually they are much smaller. The flesh has a pale cream or brown colour with white marbling.

They have a delicate flavour, therefore please don’t cook this precious specimen! A few slices over your Tournedos Rossini (my favourite), pasta or risotto will turn your dish into a culinary masterpiece.

Food and Wine Pairing
If you are looking for a wine match, you can do no better than an aged Barolo such as our Barolo ‘San Lorenzo di Verduno’ Pelassa, Piedmont, Italy 2013. Powerful yet delicate in body, this complex wine has ample dark berry, ripe cherry and plum fruit flavours. It is well balanced with smooth tannins and a beautiful persistent finish and is a wonderful match to go with the savoury character of these fantastic truffles.
