White Truffles (Tuber Magnatum) are also called ‘Piedmont Truffles’ or ‘White Truffles from Alb’. Grow symbiotically with oak, hazel, poplar or beech and fruit in the autumn. Their flesh is pale cream or brown colour with white marbling. They have a delicate flavour so please don’t cook this precious specimen!
A few slices over your Tournedos Rossini, pasta or risotto will turn your dish into a culinary masterpiece.
Food and Wine Pairing
If you are looking for a wine match, you can do no better than an aged Barolo such as our Barolo ‘San Lorenzo di Verduno’ Pelassa, Piedmont, Italy 2013
Powerful yet delicate in body, this complex wine has ample dark berry, ripe cherry and plum fruit flavours. It is well balanced with smooth tannins and a beautiful persistent finish and is a wonderful match to go with the savoury character of these fantastic truffles.
