Our Venison Steaks are sourced from deer from some of Britain’s finest estates, parks and forests. Our Olive-Fed Wagyu Denver Steak are also known as a chuck steak. They come from the under blade muscle in the shoulder. Although less well known than a Ribeye or Striploin, Denver Steaks are often more intensely marbled.  So, this gives them a glorious depth and intensity of flavour.

All of our British Wagyu comes from cattle reared in the heart of Yorkshire. These cows are raised and nurtured on a special olive-based feed. It is this that gives our British Wagyu its wonderful silky, melt in the mouth texture. Its extensive marbling provides unrivalled flavour combining the rich buttery finish of traditional Japanese Wagyu with the more beefy, iron flavours of British grass-fed beef.

Our Pork T-bone steaks are perfect if you are torn between which cut of meat you prefer. As they combine both the pork loin with the tender fillet. Juicy and flavoursome, these chops are amazing whether grilled, fried, oven braised or barbequed. So if you are looking for a tasty mid week meal or something special for the weekend, these pork steaks are sure to go down a treat!

Transylvanian Garlic Pork T-Bone Steak, Cucumber Salad

Transylvanian Garlic Pork T- Bone Steak, Cucumber Salad

Ingredients (serves 4 as a main course)

4 x 200g Pork T-Bone steaks

Add to cart

4 tbsp good quality olive oil

Splash of good quality white wine, the rest for the chefView Options
Smoked paprika to sprinkle over cucumber salad
6 garlic cloves, peeled and crushed
2 medium sized snake cucumbers, finely sliced with the skin and all
2 spring onions, finely sliced, green part only
250ml sour cream
Sea salt and freshly ground black pepper
½ tsp dry oregano
1 lemon, quartered
Special equipment needed
BBQ, best use charcoal BBQ

Method

  1. When making your Transylvanian Garlic Pork T-Bone steak with Cucumber Salad, it is good to try to do some of the preparation the night before. Place the sliced cucumber in a sieve over a mixing bowl and sprinkle generously with sea salt. Mix thoroughly and leave in the fridge for 2 hours or ideally overnight. This will help remove the excess moisture from the cucumber. Discard the liquid.
  2. Slash the pork skin and fat on the side of each steak with a sharp knife being careful not to cut into the meat.
  3. Rub the Pork T-bones with garlic, salt and pepper and drizzle them with olive oil and a splash of white wine. Make sure the meat is well coated. Cover with cling film and chill in the fridge for at least 2 hours. If you are after maximum flavour try and leave them overnight.
  4. Remove the meat from the fridge 1 hour before cooking to bring it up to room temperature. 
  5. Heat the BBQ to 160-180C grill temperature
  6. Using a BBQ tong, lift the steaks up and let the excess oil run off the meat before placing it on the hot grill. This will avoid oil dripping on the hot coals and catching fire causing your steaks to char too quickly on the outside and be underdone on the inside.
  7. Grill the steaks for 6-8 minutes on each side or until they are nice and golden brown 
  8. Pile the steaks on top of each other matching the skin and fat together. Using your tongs, stand the steaks on their side and grill for 2-3 minutes . This will render or melt the fat so the skin goes lovely and crispy.
  9. If you can’t do all the steaks together, do them individually. It is well worth the effort to ensure the fat is cooked properly and has that extra crunch. Trust us, you won’t regret it.
  10. Once you are happy with your steaks, remove them from the grill and let them rest while you prepare the salad.
  11. Place your cucumbers in a salad bowl and stir in the sour cream and freshly ground pepper. Add the spring onions, stir again, taste and adjust the seasoning if needed.
  12. Time to plate up your Transylvanian Garlic Pork T-Bone steak! Sprinkle the pork steaks with oregano and lightly dust your cucumber salad with some smoked paprika.
  13. Serve with a wedge of lemon

In Transylvania, this traditional dish known as a Pork Flekken is usually served with chips or sauteed potatoes but serving it with a fresh cucumber salad gives you a lighter and healthier version. However, I am sure no one will judge you for serving some potatoes on the side if you wish but it would certainly be a crime not to serve this dish with some great wine

Wagyu comes from breeds of Japanese cattle who are raised and nurtured on a specialist diet and in superior conditions. As a result, their meat is unlike any other with its extensive fat marbling, unrivalled flavour and melt in the mouth texture.

These fillet steaks are the most prized of all cuts and one of the most tender. So if  you are looking for a fantastic beef steak, it does not get much better than this! They have a wonderful rich soft buttery taste, sweet aromas and tenderness that will captivate your senses.

Wine Pairing
When it comes to cooking these Wagyu fillet steaks, don’t forget that the melting point of the fat in Wagyu is much lower than other breeds of beef so it will cook much quickly. We strongly recommend serving them rare or medium-rare with a medium or full-bodied wine such as nice bottle of Bordeaux, Shiraz or Sangiovese. All work brilliantly and go down a treat with these delicious steaks.

Our Cote de Boeuf is a classic bone-in rib-eye steak and is a great choice of cut. Naturally marbled  and cooked on the bone makes this steak extremely tasty and juicy. Perfect for sharing between two!

Food and Wine Pairing
Our Chateau Fonplegade, Grand Cru from Saint Emilion is a great choice to go with it. Full of red plums, ripe black cherry and cedar, this fantastic wine is a classic match. And perfectly complements the flavours of the beef.

How to cook: Preheat the oven to 200C/400F. Heat the butter in a cast iron skillet over medium-high heat. Sear the steak for 2 minutes on both sides then cook in the oven for 16 minutes for rare, 20 minutes for medium. Remove from the oven and leave to rest for at least 10 minutes. Simplicity at its best.

Storage: Keep refrigerated. Eat within 3 days of opening. Suitable for home freezing. If frozen, use within 1 month. Defrost thoroughly and use within 3 days. Do not refreeze.
